However, the high degree of instability of the extracted phenolic compounds provides a challenge for commercial utilization of these compounds. This work was devoted to optimizing the microencapsulation process of phenolic containing grape seed extract (GSE) using a pilot-scale spray dryer to demonstrate the commercial scale manufacturing potential of this process.
